Williams Mexican-restaurant tradition
Williams has supported substantial Mexican-restaurant operations across its long Route 66 commercial history. The combination of substantial tourist traffic (Grand Canyon visitation alone drives substantial demand), the local Mexican-American community, and the broader Arizona context that produces strong Mexican-restaurant traditions has supported multiple successful operations.
Pancho McGillicuddy's is one of the most enduring of these. The restaurant has operated as a Williams institution for decades, building both the tourist customer base and the local resident following that distinguishes serious community restaurants from purely tourist-oriented operations.
The Sonoran-style emphasis reflects Arizona's Mexican-food traditions. Flour tortillas, particular grilled-meat preparations, and various regional specialties distinguish Sonoran-style from Tex-Mex or California Mexican cooking. Pancho McGillicuddy's executes the Sonoran tradition consistently across the substantial menu.
