Las Cruces, New Mexico | The Whole Enchilada Fiesta is Las Cruces’ signature event, drawing 40,000 people each year. Celebrating Southern New Mexico’s culture, traditions, and people, the festival includes a wide variety of live music, a parade, Southwesters arts and crafts vendors, a carnival, food booths, and more. The highlight is the annual making of The Whole Enchilada by Roberto V. Estrada, founder of the fiesta, and 100 volunteers. The Guinness Book of World Records has named the 10-and-a-half foot enchilada the world’s largest flat enchilada. After it is topped with the final layer of red chile sauce, volunteers serve the local specialty to festival attendees.
