Here’s how to get your pancakes going. Simply pre-make your pancake mix at home, in two zip lock baggies, one for the wet ingredients, and one for the dry. Once your skillet is nice and hot. place a healthy dab of butter in it and mix your ingredients into one bag. Cut the corner of the bag and pour in the mix. Wait until each side is browned, usually just a few minutes, and your’e good to go!

Campfire Nachos

We love these campfire nachos from BackYardLifeBlog.com!

This is another super easy meal that you do most of the hard work at home (and use the trusty skillet again).

Pack all the goodies you would want for some nachos; things like onion, bell peppers, olives, cheese, cilantro, and avocado. You can pre cut these at home and put them into baggies, or do it right at the campsite.

You also want to pack your chicken mix, Take chicken breast and add your favorite Mexican or Southwestern flavors and spices, things like enchilada sauce, chipotle, and crushed tomatoes. Then freeze the bag.

Once you’re at the campsite, you can defrost your frozen chicken and cook it in the skillet. Then add it to your plates of chips and your fixings for a delicious and easy meal.

Campfire Cobbler

blueberry cobbler cooked in a cast iron skilletYou can’t finish a day in the outdoors without dessert. So put the sticks and s’mores away for one night and try something a little bit more sophisticated, campfire cobbler.

You can use any type of berry or stone fruit you like, but for this example we’ll go with blueberries. To start, put the blueberries in your skillet with some butter and sugar.

There are two ways you can make this dish. The first, is to mix your dry cobbler ingredients at home, and bring them in a container. When the time is right, simply sprinkle on top and cook in your skillet. The second way (and even easier) is to bring a canister of biscuit dough. Just pop the can and place the biscuit rounds all over the top of the berries and cook till brown.
